  1. Bring a medium pot of water to a boil over high heat. Season the water generously with salt.
  2. Heat a medium skillet over medium heat. Add butter and melt until bubbly and light golden. Reduce heat to low, then add olive oil and garlic. Cook 1 minute until fragrant. Remove from heat and set aside.
  3. Break pasta in half and add to boiling water; cook 2 minutes. Reserve 3/4 cup pasta water, then drain pasta. Immediately add the cooked pasta to the skillet and return to the stove over low heat. Add pasta water and mix well. Add parmesan, parsley and basil and stir gently. Remove from heat and serve sprinkled with pickled tomatoes, herbs, and grated Parmesan, if desired.
  4. For the pickled tomatoes (optional): Before making the pasta, combine the tomatoes, garlic, salt, chili flakes, olive oil, and red wine vinegar in a bowl. Let rest 10 minutes.
