■ Preheat oven to 350 F. Line a 12 muffin tin with muffin tins and set aside.
■ In a medium bowl, mix flour, baking powder, salt, cinnamon and nutmeg.
■ In a large bowl, beat butter and brown sugar for 2 minutes or until well combined. Add vanilla and egg; shake until incorporated.

1 apple, peeled and cored
non-stick cooking spray
4 tablespoons unsalted butter (1/2 pack), room temperature
maple syrup to taste

■ In a large bowl, mix flour, salt, cinnamon, baking powder and brown sugar.
■ Whisk eggs, milk and melted butter in a smaller bowl.
■ Mix the dry ingredients well, then mix them into the wet ingredients mixture until combined.
■ Using a cheese grater, grate the apple. Pour the grated apple into the dough.
■ Prepare a waffle iron with non-stick cooking spray.
■ Pour 1/4 of the batter mixture into a waffle iron and cook according to the manufacturer’s instructions. Repeat with the remaining dough.
■ Drizzle each waffle with 1 tablespoon room temperature butter and maple syrup to taste.
