Easy Fresh Egg Pasta Recipe: My Love for Making Homemade Pasta Hit Me Like a Hurricane | Pasta


When Hurricane Harvey hit Houston in 2017, my daughter and grandson rode the storm outside my home. Our house was not flooded, but we were flooded in the neighborhood for almost a week. We were lucky to have a generator, so when boredom set in, we set to cooking. Homemade pasta was our first challenge – and a success!

This is the basic egg pasta recipe from the instruction booklet that came with my KitchenAid pasta maker. This simple recipe is perfect for those who are making pasta for the first time. If you don’t have a KitchenAid Stand Mixer, don’t worry. This pasta dough recipe can be made with any stand mixer and pasta roller, or even by hand.

When I got the pasta attachment for Christmas, I went shopping on Amazon and bought pasta drying racks, pasta cutters, and a ravioli maker. Drying the pasta is not a necessary step (although you can do it), but a pasta rack is handy to hold the noodles while you make more. We made noodles for spaghetti, fettuccine and ravioli which was fun and delicious (recipe coming soon!).

<p>Serve fresh noodles with your favorite sauce.  Try alfredo sauce, homemade spaghetti sauce, vodka sauce, or baked tomato feta sauce.  Once you’ve made homemade pasta, you’ll want to make more and more.  It really does matter.</p>

<li>Crack the eggs into a measuring cup.  Make sure you have 7/8 cup (207 ml).  If less than 7/8 cup, add water 1 teaspoon at a time until size is reached.

<li>Place flour and salt in the bowl of a stand mixer.  Attach a flat whisk.  Turn to speed 2 and gradually add the eggs and 1 tablespoon of water.  Mix for 30 seconds.  Stop the mixer and put on the dough hook.  Continue on speed 2 and knead for 2 minutes.  Let the dough rest for 20 minutes.

<li>Divide the dough into four parts.  Place in pasta roller and cut into desired noodles. </li>

<li>To cook pasta, add 2 teaspoons salt and 1 tablespoon oil (optional) to a large pot of simmering water.  Gradually add the pasta and cook until the pasta is al dente or slightly firm in taste.  The pasta will float to the surface of the water when cooked evenly.  Throw it in a colander. </li>

	<strong>Notes: </strong>If you dry pasta, then cook for about 7 minutes.  Fresh, undried pasta takes 2 to 5 minutes to cook.</p>
